This simple, fresh and healthy easy salad is perfect for lunch, dinner or side meal. Prepare it . Sousou’s way and enjoy its fresh taste.


1 can of hearts of palm, cut into large circles

1 avocado, cut into slices and coated with lemon juice

½ bunch rocket, chopped

½ cup chopped mint

4 cucumbers, cut lengthwise

10 asparagus, steamed but crunchy

50 g green beans, steamed but crunchy


6 tablespoons olive oil

1 teaspoon dijon mustard

1½ teaspoons lemon zest

2 tablespoons lemon juice

salt and ground pepper

How to Cook:

In a small bowl, whisk the dressing ingredients together. Set aside.

Cut the asparagus and green beans into pieces.

Put the hearts of palm and the remaining salad ingredients (Except for the avocado) in a bowl. Then, add the dressing and mix well.

Top the salad with the avocado slices before serving.
