Here's a simple Egyptian dish that managed to invade the whole wide world thanks to its varieties and unique ingredients choice! How to mount all these layers in perfect harmony? Sousou has the answer!

Ingredients

2 cups boiled lentil

2 cups boiled chickpeas

2 cups fried & boiled rice

2 cups small pasta, boiled

TOMATO SAUCE

6 medium red tomatoes, diced

3 medium onions, diced

1 can diced tomatoes

4 tablespoons white vinegar

1 tablespoon corn oil

taste to salt and pepper

LEMOM SAUCE

4 cloves garlic, smashed

4 tablespoons olive oil

½ cup lemon juice

5 onions sliced & fried for the top

How to Cook:

TOMATO SAUCE:

In a pan, fry the diced onions with oil until they change color. Then, add the tomatoes, the can of diced tomatoes, salt and pepper. Mix and let it simmer on low heat until mixture thickens. Lastly add the vinegar. Divide the sauce in four parts.

LEMON SAUCE:

Mix all the ingredients together.

KOUCHARY:

In a Pyrex, place one layer of chickpeas and cover with one part of tomato sauce. Then, add one layer of rice, cover with second part. Next, add the pasta and cover with third part. Lastly, add the lentils and cover with the fourth part of tomato sauce.

Pour the lemon sauce over the kouchari and spread the fried onions on top.
