This Eggplant Pizza is the perfect Friday night meal. Easy to make right at home, no need to order in this weekend.

Ingredients

Dough

1 ½ cups flour

½ teaspoon instant yeast

¼ teaspoon sugar

¼ teaspoon salt

½ teaspoon baking powder

2 teaspoons s yoghurt

1 tablespoon olive oil

¾ cup warm water

Filling

2 medium eggplants, cut into thick round pieces

1 onion, sliced

½ cup mashed tomatoes

1 teaspoon dry oregano

300 g mozzarella and parmesan cheese

How to Cook:

Filling:

Coat the eggplants with oil and bake in oven until golden.

Fry the onion with one tablespoon of oil until has color.

Dough:

Mix the flour, yeast, baking powder, salt and sugar in a bowl. Then, add the yoghurt. Make a hole in the middle, and pour the oil into it. Stir and add water as needed to form a soft dough. If the dough is too stiff, add more water. Put the dough into an oiled bowl and let it rest for 2 hours.

Roll out the dough and place it in a baking tray.

Bake in the oven until it changes color.

Pizza:

Spread the mashed tomato over the dough. Then, add the fried onion. Place the eggplants one near the other over the onion. Lastly spread the cheese on top

Bake in oven until the cheese is melted.
