Mini Conchiglie Pasta salad is the ideal takealong for workplace lunches and a perfect lunch on the go. The colorful vegetables give it a lovely taste and loads of health benefits.



250 g mini conchiglie pasta

200 g cheddar cheese, diced

6 carrots, cut into cubes

8 cucumbers, cut into cubes

100 fresh green peas

2 tomatoes, cubed

20 black olives, seedless


12 tablespoons yoghurt

2 tablespoons mayonnaise

1 tablespoon dijon mustard

1 tablespoon vinegar

1 tablespoon oregano

salt and pepper

How to Cook:

Boil the water in a pan with one teaspoon of oil. And ¼ teaspoon of salt, then add the pasta and boil for 5 to 6 minutes. Remove the pasta and strain it.

Place all the salad ingredients into a big bowl.

In a cup mix the dressing ingredients together.

Pour the dressing over the salad and mix well.
