grated zucchini omelette

A simple and easy delicious breakfast meal to prepare, the grated zucchini omelette


5 eggs

5 zucchini pieces, shredded

1/2 onion, cubed

2 tablespoons corn

1 tablespoon parmesan cheese, shredded

2 tablespoon mozzarella light cheese, shredded

1 teaspoon light cooking cream

½ teaspoon paprika

1 tablespoon olive or canola oil

salt and pepper to taste


2 tortilla wraps (for the tortilla, refer to our tortilla wrap recipe)

How to Cook:

Beat the eggs with cooking cream, paprika, salt and pepper Add the corn and cheese to the egg mix.

In a pan on the stove, pour the oil, fry the onion until golden. Add the shredded zucchini and cook further.

Split the zucchini and onion mix in half. Add half of the egg mix to half of the zucchini and onion mix. Cover with lid and let cook. Flip the omelette and cook the other side on low heat. Repeat process for the second omelette.

Serve the omelette on a plate or on a tortilla wrap. Garnish with mint and coriander and add more parmesan cheese if you prefer
