omelette with zucchini pulp

Here's a quick and easy recipe for a tasty and nutritious breakfast: the omelette with zucchini pulp


Pulp of one kilo zucchini, chopped

6 eggs

3 medium onions, cubed

½ cup parsley, chopped

3 tablespoons flour

½ teaspoon baking powder

1 Pinch vanilla

salt & pepper

How to Cook:

Beat the eggs, salt, pepper and vanilla with a fork. Then, add the onion, pulp and baking powder.

Lastly, gradually add the flour.

Mix together well.

Coat a Pyrex with oil and spread the omelette.

Bake in the oven until it takes color.
