zucchini fatayer

Tired of ordinary old fatayers? Well this fabulous recipe adds a delicious twist to your fatayers with a filling made of zucchini, tomatoes, and onions! Perfect for parties, family occasions or served as snacks.



½ kilo zucchini, diced

3 tomatoes, diced

½ teaspoon hot pepper

½ teaspoon black pepper

2 tablespoons pomegranate molasses

4 tablespoons olive oil

salt to taste


3 cups flour

1 teaspoon instant yeast

¼ teaspoon salt

¼ teaspoon sugar

1 cup water

How to Cook:


Combine all the ingredients together, making sure to mix well.


1- Mix the flour, salt and sugar in a bowl. Make a hole in the center and pour in the instant yeast, then, add the olive oil. Next, gradually add the water and knead it to form the dough.

1- Put the dough on a floured work surface. Knead it until it becomes smooth.

1- Divide the dough into 4 balls. Cover with a nylon film and cloth and let it rest for 2 hours.


1- Roll out the dough on a floured table until it becomes thin. Cut it with a round cookie cutter, in order to create circles. In each circle, add one tablespoon of the zucchini mixture.

1- Join the two sides together making sure to press firmly and keep open in the middle.

1- Put them onto an oiled tray. Bake them in the oven until they change color.
