avocado & eggs breakfast

Start the day off right with this breakfast. Avocado and eggs are always a perfect match.

Ingredients

1 ripe avocado

2 square breads

2 eggs

2 tablespoons olive oil

1 teaspoon lemon juice

1/2 teaspoon dried oregano

8 fresh basil leaves

salt and pepper

How to Cook:

Peel the avocado and crush it in a bowl with a fork and add one teaspoon of olive oil, lemon juice, salt, pepper and oregano.

In a pan, add the remaining oil and fry the two eggs sunny side up. Add salt and pepper on top.

At the same time toast the two square breads

Place the avocado puree on top of the toasted bread, then, add one egg on top.

Place 4 basil leaves at the edges of each toast.
