No need to travel to Cyprus to taste the best flaounes! With Sousou you can prepare these small traditional savory buns stuffed with cheese at home! So, go ahead, give this special Cypriot recipe a try.

Ingredients

FILLING

2 packs halloumi cheese, grated

4 teaspoons baking powder

500 g kashkaval, grated

½ teaspoon salt

2 teaspoons flour

10 eggs

¼ teaspoon musk

¼ teaspoon nutmeg

¼ teaspoon fenugreek

1 bunch chopped mint

DOUGH

5 cups flour

¼ teaspoon fenugreek

¼ teaspoon nutmeg

¼ teaspoon musk

3 teaspoons baking powder

½ teaspoon salt

¾ cup olive oil

1½ to 2 cups water

How to Cook:

Dough:

Mix the flour, salt, fenugreek, nutmeg, musk and the baking powder in a large bowl, then, add the olive oil and gradually the water. Knead it well; to form the dough. Divide the dough into 6 balls. Cover with nylon film and a cloth. Leave aside for ½ hour

Filling:

Mix the two cheeses, mint, fenugreek and nutmeg. Then, add musk, baking powder, flour and salt. Lastly, add the eggs one at a time. Mix well after each addition.

Flaounes:

Spread some sesame seeds on the work surface.

Roll out the dough on a floured table until it becomes thin. Cut it with a round cookie cutter, in order to create circles.

Put in each circle one tablespoon of the cheese filling. Join the three points in order to form a triangle. Leave the middle open. Press the edges firmly.

Put them in an oiled tray and bake them in the oven until golden.
