When we say traditional Lebanese mezze, the first thing that comes to our mind is kibbeh nayyeh. It’s a beloved Lebanese dish made of raw meat and burghul. Sprinkle some olive oil and dry mint over the top before serving.

Ingredients

½ kg fresh lamb ground meat

1 cup fine cracked wheat (burghul)

1 big onion

½ teaspoon black pepper

½ teaspoon marjoram

salt to taste

How to Cook:

Wash the cracked wheat and let it sit for 15 minutes. Using a food processor, mash the onion and cracked wheat for 5 minutes. Then, add salt, pepper and marjoram. Next, add the meat along with 3 or 4 cubes of ice. Mash the ingredients for another 5 minutes.

Remove the mixture and knead it with wet hands for 7 minutes until it's soft.

Place the kibbeh nayyeh on a plate. Decorate it with fresh mint.

It can be served with olive oil, green onions, radish and fresh mint.
