spinach filled crepes

You can fill crepes with a whole range of fillings. These ones are filled with spinach and cheese. Prepare them with Sousou and have your dinner ready in a flash!

Ingredients

CREPES

1 ½ cups flour

1 cup milk

1 tablespoon mazola oil

2 eggs

1 pinch salt

1 pinch vanilla

WHITE CREAM

1 tablespoon butter

1 tablespoon flour

1 cup milk

SPINACH FILLING

400 g frozen spinach

200 g chopped ham

100 g grated gruyere cheese

200 g sliced mushrooms

600 g fresh cream

½ tablespoon mustard

white pepper and salt to taste

3 tablespoons parmesan cheese

How to Cook:

CREPES:

In a bowl, mix the eggs, salt and vanilla with a fork. Then, add the flour and gradually add the milk.

Heat a lightly oiled pan over medium heat. Pour the batter using a small ladle. Tilt the pan in a circular motion so the batter coats the surface evenly

Cook the crepe for about 2 minutes, until the bottom is light brown. Then, flip it. Cook the other side.

WHITE SAUCE:

Mix all the ingredients and stir over low heat until the sauce thickens.

SPINACH FILLING:

In a bowl, mix the spinach, ham, cheese and Mushrooms with the white sauce.

Fill each crepe with the spinach mix. Roll it and Put it in the Pyrex. Repeat until the Pyrex is full.

Bake for 15 minutes and set aside.

Before serving, mix the fresh cream, mustard and white pepper and pour it over the crepes. Sprinkle with parmesan cheese and some almonds Bake until golden.
