coconut cake with yoghurt

If you love coconut and yoghurt, then this cake will be your favorite. It’s a super soft cake with delicious apricot flavor. You can serve it as a healthy snack to your kids or at your next family or friends gathering.

Ingredients

6 eggs

3 cups flour

2 ½ cups sugar

100 g butter

3 cups coconut

3 teaspoons baking powder

¾ cup yoghurt

2 tablespoons apricot jam

1 pinch vanilla

1 Teaspoon grated lemon rind

How to Cook:

Beat the butter, sugar, lemon rind and vanilla using an electric mixer in a bowl until it becomes light and fluffy

Add the eggs one at a time making sure to mix well after each addition.

Stir in the flour and the coconut in six batches. Then, add the yoghurt, apricot jam and baking powder.

Pour the mixture into a buttered baking tray.

Bake in oven at180 degree C. between 50 to 60 minutes.
