1 kg of pineapple

500 g of sugar

1 vanilla bean

1 glass of water

2 tablespoons lemon juice

How to Cook:

Peel the pineapple, remove the fibrous core, cut the flesh into small pieces.

Put water and sugar in the pot. Boil the water. After 2 to 3 minutes of boiling, when small shiny pearls sparkle on the surface, put the pieces of pineapple and vanilla.

Cook over high heat for 15 minutes; stir occasionally.

Let simmer on low heat for 25 minutes.

Stir and check the consistency by pouring a drop of jam on a plate: it’s cooked when the drop freezes.
