This special dish from Palestine is made out of simple ingredients like olive oil, sumac, onions, chicken and fresh bread. It’s simple yet you have to taste it to discover how it is actually much more that the sum of its parts.


2 chicken breasts

4 onions, chopped into thin slices

2 tablespoons sumac

5 tablespoons corn oil

3 saj bread (markouk)

salt and pepper to taste

How to Cook:

Place the chicken in a baking tray and coat with 2 tablespoons of corn oil. Bake in the oven until golden. Then, cut into very small pieces.

Fry the onions with 3 tablespoons corn oil until they change color. Then, add the chicken and mix well. Next, add the red pepper, sumac, salt and pepper.

Open a saj bread, fill it with chicken mixture and roll it as a sandwich, then toast it.
