This special dish from Palestine is made out of simple ingredients like olive oil, sumac, onions, chicken and fresh bread. It’s simple yet you have to taste it to discover how it is actually much more than the sum of its parts.


700-800 g chicken breasts

4 big onions, chopped into thin slices

2 tablespoons sumac

1/2 teaspoon red chili pepper, or paprika

2 tablespoons grenadine molasses

5 tablespoons canola oil

4 saj bread (markouk)

salt and pepper to taste

How to Cook:

Place the chicken in a baking tray and coat with 2 tablespoons of oil. Add the salt and the pepper. If the chicken is too thick, score the thick parts in a criss-cross fashion with the knife, around 1 cm deep cuts

Bake in the oven on 270 degrees Celsius, until they are fully cooked with a nice golden color. Then, cut them into small pieces

Fry the onions with 3 tablespoons of oil until they are golden brown and caramelized on medium – high heat

Add the small chicken pieces to the onions. Next, add the red pepper, sumac, grenadine molasses, salt, and pepper. Mix well

Open a Saj bread, fill it with the chicken mixture and roll it as a sandwich, then toast it in a toaster (@kenwood). Repeat for the remaining saj breads
