3 Cups flour
230g Melted butter
1 Tablespoon powdered sugar
1 Egg, lightly beaten
1½ Tablespoons lemon juice
1 Egg white
2 tablespoons apricot jam
5 Large apples ,thinly sliced
½ Cup water
4 Tablespoons sugar
1 Teaspoon grated orange rind
How to Cook:
Combine the flour and sugar in a bowl. Rub in the butter then, add the egg and enough lemon juice to make a firm dough. Cover and put in the fridge for half an hour.
Roll three quarters of the dough between sheets of plastic wrap. Put the dough in a buttered pie pan, then refrigerate for 30 minutes with the remaining pastry.
Cover the pastry with wax paper, fill with dried beans and bake in moderately hot oven for 7 minutes; remove the beans and paper and bake again until golden.
Combine the apples & water in a saucepan, bring to a boil. Reduce the heat. Let simmer covered on low heat for 10 minutes or until apples are tender. Stir in sugar and orange rind. Cool in room temperature, and drain.
Spread the cooled filling into the pastry.
Roll the remaining pastry out to 3 mm thickness. Cut into one cm. Brush the edge of pastry with white egg. Place the strips over the filling.
