This recipe is a traditional condiment of pickled peppers, carrots and papaya from the famous Filipino cuisine. It adds a wonderful refreshing accent to many dishes.
Ingredients
1 sweet green pepper, cut lengthways thin
1 sweet red pepper, cut lengthways thin
1 sweet yellow pepper, cut lengthways thin
1 sweet purple pepper, cut lengthways thin
2 carrots, cut lengthways thin
1 big green and hard papaya, grated
1 tablespoon grated fresh ginger
½ cup brown sugar
½ cup white vinegar
½ cup water
¾ cup raisin
1 teaspoon salt
