This recipe is a traditional condiment of pickled peppers, carrots and papaya from the famous Filipino cuisine. It adds a wonderful refreshing accent to many dishes.
Ingredients
1 Sweet green pepper, cut lengthways thin
1 Sweet red pepper, cut lengthways thin
1 Sweet yellow pepper, cut lengthways thin
1 Sweet purple pepper, cut lengthways thin
2 Carrots, cut lengthways thin
1 Big green and hard papaya, grated
1 Tablespoon grated fresh ginger
½ Cup brown sugar
½ Cup white vinegar
½ Cup water
¾ Cup raisin
1 Teaspoon salt

How to Cook:
Boil the carrots for 10 minutes.
In a pan, place sugar, salt, pepper, ginger. Then, add vinegar and water.
On the stove, stir to dissolve the sugar. Then, add the carrots and peppers and continue cooking. When it starts boiling, add papaya and let simmer for 15 minutes. Lastly, add the raisins.
