Don’t compromise on your nutrients and make sure you try Sousou’s black-eyed beans with chard leaves.
3 Garlic cloves smashed
12 Chard leaves, chopped
1 Cup black-eyed beans
¾ Cup coriander, chopped
1 Tablespoon corn oil
Salt and pepper to taste
Put the black-eyed beans in a pot, cover with water.
Let it boil for 10 minutes, then turn it off and let it sit for one hour.
Strain the beans, add 3 cups of water and continue to cook for one hour or until the beans become soft.
Heat one tablespoon of oil and fry the garlic, then add the coriander and chard leaves, and water if needed.
Keep on low heat until the leaves are cooked.
Add the black-eyed beans with ½ cup of water, salt, and pepper. Mix together and let simmer for 7 to 10 minutes.
