Ingredients

  •  FOR THE CAKE
  • 7 eggs
  • 1½ cups icing sugar
  • 1 cup flour
  • 1 cup potato starch
  • 1 teaspoon baking powder
  • 1 teaspoon grated lemon rind
  • 1 pinch vanilla

 

  • FOR THE CREAM
  • 150 grams powdered sugar
  • 3 tablespoons water
  • 4 egg yolks
  • 330 grams butter, melted
  • 1 pinch vanilla
  • 1 teaspoon grated lemon rind

How to Cook:
  • FOR THE CAKE
  • In a bowl, beat the eggs, Icing sugar, vanilla and lemon rind with an electric mixer until they become fluffy.
  • Stir in the four and the potato starch in four batches.
  • Then, add the baking powder.
  • Put wax paper in two rectangular buttered trays size 35 – 27 cm. Pour on the preparation.
  • Bake in the oven at 180. degrees C. for about 15 to 20 minutes
  • Once done, flip the cake upside down on a wet kitchen towel, remove the wax paper from the bottom and roll onto the buche’s shape around the wet towel. Leave it until it cools down.

 

  • FOR THE CREAM
  • In a pan on the stove, stir the sugar and the water.
  • Beat the egg yolks, vanilla and lemon rind in a bowl with an electric mixer until fluffy.
  • Gently add the boiling sugar syrup while still mixing.  Beat until the mixture becomes thick and cold.
  • Continue mixing while adding the butter slowly until mixture is combined. Use immediately.

 

  • FINAL STEP
  • Unroll the cake from the wet kitchen towel, fill it with cream and roll it back onto buche’s shape (without the kitchen towel).
  • Cover it with cream & decorate.
