Treat your family to a hearty meal full of healthy ingredients by serving Bourghoul Bedfine, a really rich recipe with beef, cracked wheat and chickpeas. It’s a guaranteed crowd pleaser!


300 g lamb or beef, cubed

1 big onion, diced

30 very small onions (peeled)

¾ cup chickpeas

½ teaspoon baking soda

5 cups water

1 ½ cups cracked wheat

50 g butter, melted

salt, and pepper to taste

1 cinnamon stick


2 cups meat stock

1 tablespoon flour

salt and pepper

How to Cook:

Soak the Chickpeas in water overnight.

The Next day, place the chickpeas in a pan and add the baking soda and cover with water. Boil the chickpeas for 15 minutes.

Fry the onion in the high pressure cooker. Then, add the meat, chickpeas, pepper, salt and the cinnamon Stick.

Next, add water, Close the high pressure cooker and cook for 30 minutes.

Peel the small onions and fry them.

When the meat is cooked, add the small onions to it and boil for 10 more minutes.

Set aside two cups of meat stock to use for the sauce.

Add the cracked wheat (make sure there is only one cm of water over the meat).

Once cooked. Add the melted butter.


In a small bowl, dissolve the flour with little water.

In a pan on the stove, stir the meat stock and flour together until the sauce thickens. Then, add salt and pepper.

Serve with yogurt and the sauce.
