Have you been wondering about the easiest way to prepare Chicken Biryani? Here’s how Sousou’s simple recipe filled with aromatic ginger saves the day!

Ingredients

  • 8 Chicken drumsticks
  • 4 Chicken Breasts, cut each into four pieces
  • 6 Medium onions, chopped into thin slices
  • 8 Garlic cloves, sliced
  • 1 ½ Red tomatoes, cut into small cubes
  • 1 Sweet green pepper, cut into small cubes
  • ½ Cup Parsley, chopped
  • 4 Tablespoons corn oil
  • 2 Teaspoons biryani spices
  • 1 Teaspoon ginger
  • 2 Teaspoons saffron
  • ½ Cup water
  • 1 Cinnamon stick
  • Salt to taste

Rice:

 

  • 1 Cup basmati rice
  • 2 Cups  chicken Stock
  • 1 Tablespoon olive oil
  • 1 Teaspoon saffron
  • Salt to taste
  • ½ Cup raisins
  • 1 Cup fried cashew nuts (For decoration)

How to Cook:
  • Fry the chicken in a pan with 3 tablespoons of oil. Cover them with water. Add one teaspoon of saffron, cinnamon stick, and salt. Boil them for 15 minutes or until cooked. Then remove the chicken and keep the chicken stock aside.
  • Fry the onions & garlic in a pan with one tablespoon of corn oil until it changes color. Add the ginger, green pepper & salt. Then add the biryani spices, tomatoes & parsley. Add one teaspoon of saffron and half a cup of water.
  • Let it simmer on a low heat until it thickens.

 

Rice:

 

  • Boil the basmati rice with the chicken stock, olive oil, saffron and salt.
  • When done, mix it with the raisins.
