chicken with curry & coconut

Ingredients

Chicken

5 chicken legs, cut into 10 pieces

3½ cups water

salt and pepper

4 tablespoons corn oil

3 chicken breasts, cut into 12 pieces

4 tablespoons curry

4 tablespoons coconut powder

2 apples

1 maggi cube

1 can of diced tomatoes

6 carrots, cut into circles

3 medium onions, diced

Rice

2 cups uncle bens rice

2 cups water

2 tablespoons corn oil

2 garlic cloves, smashed

1 teaspoon cardamom powder

½ cup dried raisin

5 dried apricots, chopped

How to Cook:

Coat the chicken with two tablespoons of oil, two tablespoons of curry, salt and pepper and set aside for half an hour.

Place the chicken in a tray and bake them for 30 to 40 minutes or until golden brown.

In a pan on the stove, fry the onion with 2 tablespoons of corn oil until they change color. Then, add the carrots and fry them. Next, add the tomatoes, salt, curry, pepper, water and Maggi cube. Let it simmer until sauce thickens.

Peel and grate the apples. Then, add them to the mixture. Next, add the coconut. Lastly, add the chicken and let it simmer for another 10 minutes.

Rice:

In a pan on the stove, fry the garlic with the oil until they change color. Add the rice, cardamom and salt. Then, add the water.

Once it starts boiling, reduce the heat and cook the rice until all the water has evaporated.

Decorate the rice with the raisin and dried apricots.
