Get into the holiday spirit by baking this delicious cake during the festive season


2 cups sugar

1 pinch vanilla

2 cups liquid milk

125 g butter

1 teaspoon nutmeg

1 teaspoon cinnamon

1 teaspoon cloves

1 tablespoon lemon rind, grated

4 teaspoons baking powder

4 cups flour

4 eggs

4 tablespoons carob molasses


1 cup dates, chopped small

1 cup dried figs, chopped small

1 cup dried cherries, chopped small

1 cup dried mixed fruits, chopped small

1/2 cup walnuts or hazelnuts, ground

1/2 cup almonds, ground

1/2 cup raisins

orange juice to soak the fruits

How to Cook:

Soak the dates, dried figs, dried cherry, raisin and dried mix fruits with orange juice overnight. Next day, strain them and keep the orange juice aside.

Beat butter, sugar, vanilla, lemon rind and carob molasses with an electric mixer until the batter becomes fluffy.

Add the eggs one at a time, be sure to mix well after each addition. Stir in the flour, baking powder and milk in five batches. Next, add cinnamon, nutmeg and cloves.

Coat the soaked fruits with 2 tablespoons of flour and add them to the prepared cake batter. Then, add walnuts and almonds. Mix well.

Pour the mixture into two pans coated with a bit of tahini. Bake in a preheated oven at 160 Degrees Celsius for around 70 to 75 minutes.

Once baked, spread the prepared mixture of orange juice if you want (optional). Let the baked cakes cool for ten minutes before unmolding them. Once unmolded, sprinkle with powdered sugar.
