cookies (kaak) filled with pistachios, walnuts or dates

Sousou does it best! Try for yourself her Eid cookies,  stuffed with pistachios, walnuts or dates, with a special dough and shape.



100 g butter

1 cup liquid milk

600 g flour

¼ teaspoon fenugreek

¼ teaspoon nutmeg

¼ teaspoon musk

1 tablespoon baking powder

1 teaspoon instant yeast

1 tablespoon orange blossom water

1 cup sugar


¼ cup rosewater

250 g pistachios

¼ cup orange blossom water

¾ cup sugar


250 g walnuts

¾ cup sugar

¼ cup orange blossom water

¼ cup rosewater


½ kilo dates, pitted

75 g butter

How to Cook:


Combine the milk, butter & sugar in a saucepan and stir on low heat until the butter melts and the sugar dissolves.

Place the flour into a bowl. Then, add fenugreek, musk, nutmeg, baking powder & yeast. Next, add the orange blossom water. Lastly, add the milk and butter mixture. Combine and knead the dough by hand.

Cover with a nylon sheet and a dry kitchen towel and let it rest for 2 hours.


Grind pistachios in a food processor and mix it with the remaining filling ingredients.

Repeat the same procedure for the walnuts filling.


In a tray, place the dates with the butter and put it in the oven until the butter melts. Then grind them in a food processor.


Divide the dough into small balls. Flatten it in the palm of your hand. Then stuff it with 1 teaspoon of the filling. Seal the edges and roll it into a ball.

Form the dough into the shapes you prefer. You can choose two different shapes in order to differentiate them from each other (depending on the filling).

Place them onto a tray and bake them in the oven until golden brown.
