Just like she did with Oriental kibbeh recipes, Sousou flies all the way to Cyprus bringing its unmatched Sour Cypriot version!



300 g minced meat

2 big onions, diced

1 tablespoon oil

¾ cup chopped parsley

½ lemon, squeezed

salt and pepper to taste

Koubis Dough

500 g cracked wheat (berghol)

1/2 cup flour

1 egg

3 ½ cups water

3 tablespoons olive oil

1 big onion, grated

salt and black pepper to taste

How to Cook:


In a pan, fry the onions with oil until they change color.

Add the meat and stir until the water evaporates. Then, add salt, black pepper, parsley and lastly the lemon.

Koubis Dough:

Soak the cracked wheat with 3 ½ cups of hot water for three hours.

Then, add the grated onion, flour, olive oil and egg. Mix very well until you have a koubis dough.


Divide the koubis dough into small balls of an apricot size.

Take each ball and make a hole in the middle, then enlarge it with your finger to form a 8 cm tube. Fill it with some of meat mixture. Bring together the sides and sharpen the edges, then moisten it with cold water.

Deep fry the koubis in corn oil until golden brown. Serve directly.

Squeeze some lemon on the koubis before eating.
