This colorful and light salad is a new way to enjoy quinoa. Avocado, spinach and lettuce leaves give it a refreshing kick, while quinoa and butternut add a tasty flavor full of health.

Ingredients

1 cup quinoa

4 cucumbers, cut into long thin slices

40 baby spinach leaves

5 lettuce leaves, cut into big pieces

1 avocado, cut into cubes (coat with lemon)

60 g steamed butternut (or steamed sweet potatoes)

10 black tomatoes, cut into slices

DRESSING

2 tablespoons olive oil

1 tablespoon pomegranate molasses

¼ teaspoon black pepper

salt to taste

DRESSING

2 tablespoons balsamic vinegar

How to Cook:

Place the Quinoa in a pot with 2 cups water. When it starts boiling, reduce the heat and keep it cooking for 15 to 20 minutes. Then drain it.

In a big bowl, put all the ingredients together except for the Avocados and butternut.

Combine all dressing ingredients.

Spread the Dressing over the salad and mix well.

Decorate the top with butternut and avocado.

You can add 90 Grams reduced fat Feta cheese cut into cubes.
