This colorful and light salad is a new way to enjoy quinoa. Avocado, spinach and lettuce leaves give it a refreshing kick, while quinoa and butternut add a tasty flavor full of health.

Ingredients

  • 1 Cup quinoa
  • 4 Cucumbers, cut into long thin slices
  • 40 Baby spinach leaves
  • 5 Lettuce leaves, cut into big pieces
  • 1 Avocado, cut into cubes (coat with lemon)
  • 60 Grams steamed butternut (Or steamed sweet potatoes)
  • 10 Black tomatoes, cut into slices

 

Dressing:

 

  • 2 Tablespoons balsamic vinegar
  • 2 Tablespoons olive oil
  • 1 Tablespoon pomegranate molasses
  • ¼ Teaspoon black pepper
  • Salt to taste

How to Cook:
  • Place the Quinoa in a pot with 2 cups water. When it starts boiling, reduce the heat and keep it cooking for 15 to 20 minutes. Then drain it.
  • In a big bowl, put all the ingredients together except for the Avocados and butternut.
  • Combine all dressing ingredients.
  • Spread the Dressing over the salad and mix well.
  • Decorate the top with butternut and avocado.
  • You can add 90 Grams reduced fat Feta cheese cut into cubes.
