PLAIN ESCALOPE:
Combine the meat, egg yolk, vanilla, milk and the ¾ cup bread crumbs. Then, add salt, pepper and cinnamon. Mix well.
In a separate bowl, mix 2 eggs with the 2 tablespoons water, vanilla and salt.
Place the flour and breadcrumbs in two separate plates.
Take a piece of the mixture meat, roll it and flatten it in the palm of your hands, coat it with flour, then with eggs and lastly with bread crumbs.
Repeat the same procedure until half the meat is done.
Bake in oven or fry and serve with vegetables or potatoes.
ESCALOPE CORDON BLEU:
Take a piece of the mixture meat, roll it and flatten it in the palm of your hands, Place one piece of turkey and sliced cheese on top, then cover with another piece of escalope.
Close it well from all sides then, coat it with flour, then with eggs and lastly with bread crumbs.
Bake in oven or fry and serve with vegetables or potatoes.
All escalopes can be prepared ahead of time and placed in the freezer.
