Get creative with those golden crunchy patties and make your own falafel at home, it doesn't get any easier thanks to Sousou!

Ingredients

1 kg skinless broad beans

6 cloves garlic

3 onions peeled

1 bunch washed coriander

1 tablespoon ground coriander

1 tablespoon ground cinnamon

1 tablespoon sweet pepper

1 tablespoon cumin

½ teaspoon red pepper

salt to taste

4 pieces bread crumbs (sliced bread)

2 cups oil

2 teaspoons baking powder

How to Cook:

Soak the broad beans overnight.

Next day, drain the broad beans.

In a food processor, grind the broad beans, coriander, onion, garlic and breadcrumbs.

Add the ground coriander, cinnamon, cumin, sweet pepper, salt and red pepper. Mix very well.

Divide the mixture into portions of 500g each. They can be stored in the freezer.

To fry one bag of 500g, add 2 teaspoons of baking powder.

Form the broad beans mixture into balls about the size of a ping-pong ball and slightly flatten them, or use a falafel scoop.

Heat the oil in a deep pan and fry one falafel to test; if it does not rise, then add one more teaspoon of baking powder. Then fry the remaining balls until golden brown.

Serve the falafel with chopped tomatoes, parsley, mint and radish. Drizzle with Taratour Sauce (Sesame paste with water, lemon and salt). 500 g portion makes around 20 falafel.
