Ingredients
1 kilo zucchini, grated
6 medium tomatoes, cubed
2 big onions, cubed
6 cloves garlic, smashed
2 tablespoons corn oil
1 ½ cups water
2 tablespoons tomato paste
½ teaspoon red pepper
salt and pepper to taste

In a pan on the stove, fry the onions and garlic with oil until they take color. Then, add the tomatoes and mix. Let it simmer for ten minutes.
Next, add the grated zucchini, the water and the tomato paste and let it cook for ½ an hour on low heat. Lastly, add the peppers and salt.
Let them simmer until the sauce thickens.
You can fry four eggs on top of this dish, if you would like.
