Grated Zucchinis with Tomatoes

Ingredients

  • 1 Kilo zucchini, grated
  • 6 Medium tomatoes, cubed
  • 2 Big onions, cubed
  • 6 Cloves garlic, smashed
  • 2 Tablespoons corn oil
  • 1 ½ Cups water
  • 2 Tablespoons tomato paste
  • ½ Teaspoon red pepper
  • Salt and pepper to taste

How to Cook:
  • In a pan on the stove, fry the onions and garlic with oil until they take color. Then, add the tomatoes and mix. Let it simmer for ten minutes.
  • Next, add the grated zucchini, the water and the tomato paste and let it cook for ½ an hour on low heat. Lastly, add the peppers and salt.
  • Let them simmer until the sauce thickens.

You can fry four eggs on top of this dish, if you would like.
