Looking for a vegetarian meal? This colourful Heart of Artichoke filled with Broad Beans is perfect for a nutritious and healthy dinner.

Ingredients

  • 12 hearts of artichoke

 

  • FILLING
  • ½ cup lemon juice
  • ½ kilo fresh broad beans
  • 1 teaspoon sugar
  • 1 cup chopped coriander
  • 2 cloves garlic, smashed
  • 2 tablespoons olive oil
  • 1 cup pomegranate seeds
  • ½ cup  fried pine nuts
  • salt and pepper

 

  • SAUCE
  • 1 tablespoon flour
  • 2 cups artichoke stock
  • 1 tablespoon lemon juice
  • salt and pepper

How to Cook:
  • Peel the broad beans.
  • To keep the green color of the broad beans, add one teaspoon of sugar in the water and boil it.
  • Fry the coriander and garlic with oil
  • Place the artichoke in a pan, cover with water, add the lemon juice and boil them.
  • Set aside two cups artichoke stock.
  • SAUCE
  • Place 1 tablespoon of flour in a pot and gradually, add the artichoke stock while constantly stirring.
  • Place the pot on the stove and keep stirring until the sauce thickens. Then, add salt, pepper and lemon juice.
  • SERVING
  • Fill each artichoke with one tablespoon of the sauce and add some of the coriander and broad beans, garnish with pomegranate seeds and pine nuts.
  • Place them in a serving plate,
  • Keep the remaining sauce in a bowl by the serving plate.
