Ingredients

  • 5 Chicken legs, cut into 10 pieces
  • 4 Chicken breasts, cut into 16 pieces
  • 5 Tablespoons corn oil
  • 2 Onions, chopped into small cubes
  • 3 Garlic cloves, smashed
  • 1 Teaspoon ginger
  • 1 Teaspoon turmeric
  • 1 Teaspoon ground red pepper
  • ¼ Teaspoon cumin
  • 2 Teaspoons ground coriander
  • 1 Green pepper, sliced
  • 2 Tablespoons chopped fresh coriander
  • 1 Tablespoon tomato paste
  • 100 g cashew nuts, ground
  • 1 teaspoon saffron
  • 3 cups water
  • Salt to taste
  • 200ml fresh cream

 

Rice:

 

  • 1 Cup basmati rice
  • 1 Teaspoon turmeric
  • 2 Cups water
  • Salt to taste

How to Cook:
  • Place the chicken in a baking tray, coat them with 3 tablespoons of oil and bake them golden brown.
  • Fry the garlic and onion with the remaining oil until they change color. Then lower the heat and add the ginger, turmeric and red pepper. Next, add cumin and cashews. Continue stirring and add corianders, green pepper, tomato paste and salt. Then add 3 cups of water and the saffron.
  • Add the baked chicken. Let simmer for 15 minutes. Then, add the Fresh cream and let simmer for another 10 minutes.

 

Rice:

 

  • Boil the Basmati rice with salt, water and turmeric. Remove once all water evaporates.
