Made with a bulgar wheat base, this salad is tangy and filling.

Ingredients

  • 1 cup thin cracked wheat (bulgur)
  • 2 tablespoons corn oil
  • 1 medium onion, diced
  • 1 cup tomato sauce
  • 1 cup chopped parsley
  • 2 green onions, chopped
  • 4 red tomatoes, diced
  • ½ cup chopped mint
  • 4 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon spicy red pepper paste
  • 2 tablespoons tomato paste
  • 1 tablespoon pomegranate molasses
  • Salt and pepper to taste

How to Cook:
  • In a pan, fry the onion until it changes color.
  • Stir in the cracked wheat (bulgur).
  • Add the tomato sauce, lemon juice and spicy red pepper paste and leave aside for 15 minutes until cold.
  • Add the parsley, green onions, diced tomatoes, mint and olive oil. Then, add pomegranate molasses, salt, pepper and tomato paste.
  • Mix to obtain a soft salad.
