Try something new Sousou’s way. How about this kebbet batata in the oven made with cracked wheat and potatoes?

Ingredients

FOR THE KEBBEH

1 Kilo potatoes

2 Cups berghol (cracked wheat)

1 Cup flour

1 Bunch coriander

1 Big onion, peeled

½ Skin of lemon

½ Skin of mandarin

½ Cup walnuts

Salt and pepper to taste

FOR THE FILLING

7 Onions, peeled

1 Cup grated walnuts

1 Tablespoon pomegranate molasses

4 Tablespoons corn oil

1 Teaspoon grated lemon rind

Salt and pepper to taste

How to Cook:

FOR THE KEBBEH

On the stove, boil the potatoes in a pot for 20 minutes or until soft

Peel the potatoes and mash them using the manual grinder

In a food processor, ground the onions and coriander

Then, add the lemon skin, mandarin skin. Lastly, add the walnuts, add them to the mashed potatoes

Wash the berghol and squeeze it well

Add it to the potatoes. Then, add salt & pepper

Mix well and let it rest for one hour

FOR THE FILLING

In a pan on the stove. Fry the onions with oil until they take a light brown color. Then, strain them

Mix them with walnut, salt and pepper

Put aside

FOR THE KEBBET BATATA

Preheat the oven at 200 degrees Celsius

In an oiled medium round tray, put ½ cm layer of kebbeh. Spread the onion filling over it and cover it with another ½ cm
layer of kebbeh

Then, moisten with cold water. Cut the top layer of the kebbeh in square pieces

You can create the design you like for each square

Brush the kebbeh with olive oil

Bake it in the oven for 30 minutes
