kechek manakish

These manakish are made with a very traditional Lebanese product, keshek, a dairy ingredient that will surprise you in every bite.

Ingredients

DOUGH

500 g flour

1 tablespoon powdered milk

½ teaspoon sugar

½ teaspoon salt

1 tablespoon olive oil

1 tablespoon instant yeast

1 tablespoon baking powder

1 egg

1¼ cups water

FILLING

1 medium onion, diced

1 cup kechek

4 tablespoons tomato paste

4 medium tomatoes, diced

½ cup sesame

½ squeezed lemon juice,

¾ cup olive oil

How to Cook:

DOUGH:

In a bowl, soak the sugar with the oil with one cup of water. Then, add the flour, instant yeast, baking powder and egg. Next, add the salt and milk.

Knead well to form a dough. If the dough is too stiff, add the remaining water. Lastly, cover with a nylon sheet and a kitchen cloth. And let it rest for 2 hours.

FILLING:

Combine all ingredients in a bowl.

MANAKISH:

Roll out the dough on a floured table until it becomes thin. Cut it with a rounded cookie cutter in order to create circles.

In each circle put 1 tablespoon of the kechek mixture.

Put them in a greased baking tray.

Bake in the oven until they take color.
