Sousou presents you with the recipe of the famous Kellaj Ramadan. Try it for a great after-Iftar dessert.

Ingredients

FILLING

3 cups milk

½ cup fresh cream

3 tablespoons corn flour

2 tablespoons semolina

4 tablespoons sugar

1 tablespoon orange blossom water

SYRUP

1 ½ cups water

3 cups sugar

1 tablespoon lemon juice

1 tablespoon orange blossom water

½ cup pistachios

KELLAJ

1 pack kellaj dough

3 cups liquid milk

How to Cook:

FILLING :

Heat 2 cups of milk.

In a bowl, melt the corn flour with the remaining cup of milk. Then, add sugar and semolina mix.

Add the corn flour mixture to the milk and stir on the stove until it thickens.

Add the fresh cream and mix it with the mixture. Turn off the heat.

Add the Orange Blossom Water and mix well.

Set it aside until cool.

KELLAJ :

Fill a large deep tray with milk, and then dip each filo pastry of kellaj in it before using it.

Unfold, then, fill each with one tablespoon of filling and fold it.

Heat the oil and fry the kellaj until golden brown.

Spread the syrup over the kellaj.

Decorate with pistachios.

SYRUP :

Combine the sugar and water in a pan and stir over low heat until it becomes slightly thick. Add the lemon juice and the Orange blossom water.
