You have surely tried lentils in hot dishes and main courses. Try it today as a salad component mixed with tasty ingredients such as pomegranate and coriander!

Ingredients

Salad:

 

  • 1 Cup black lentils
  • 3 Tomatoes, diced
  • 1 Red onion, diced
  • 1 Garlic clove, diced
  • 250g Halloumi cheese, sliced
  • ½ Cup coriander leaves
  • ½ Cup pomegranate seeds
  • Salt and pepper

 

Dressing:

 

  • ½ Cup balsamic vinegar
  • 3 Tablespoons Olive Oil
  • Salt and pepper

How to Cook:
  • In a pan, cook the lentils for 30to 35 minutes or until lentils are tender. Strain them.
  • Place the lentils in a bowl and season with salt, pepper and garlic. Then, add the tomatoes and onion.
  • In a cup, combine all the dressing ingredients together and pour it over the salad.
  • Grill the halloumi cheese and place it on top of the salad. Sprinkle the coriander and add pomegranate on top.
