Enjoy the delicious flavor of the mandarin fruit combined with hazelnuts and coconut. Mandarin Cake is a great dessert to make for any occasion, whether it be a tea party, family gathering or simply a healthy snack for your kids to enjoy

Ingredients

  • 2 Medium (400g) mandarins
  • 2 Eggs
  • 1 Cup sugar
  • 125 Grams melted butter
  • ½ Cup coconut
  • 1/3 Cup hazelnuts
  • 2 Cups flour
  • 2 Teaspoons baking powder
  • 1 Teaspoon grated lemon rind
  • 1 Pinch vanilla

How to Cook:
  • Place the unpeeled mandarins in a medium pan. Cover with water and bring to boil. Then, drain the water and repeat two more times. Let it rest until cold.
  • Cut the mandarins in half. Then, take out the seeds and blend.
  • In a bowl, beat the butter, sugar, vanilla and lemon rind with an electric mixer, until it becomes fluffy.
  • Add the eggs one at a time making sure to mix well after each addition.
  • Stir in the flour and coconut in two batches and then, add the baking powder, hazelnuts and blended mandarins. Mix well until the ingredients are combined.
  • Pour the mixture in a buttered pan.
  • Bake in oven at 200 degrees celsius for about 55 minutes.
