Sousou’s middle name is innovation and bold ideas, check this interesting creation for instance where she replaced the “Fatayer” pastry through with the “Katayef” dessert ones! Amazing!

Ingredients

Dough

3 cups flour

2 tablespoons flour (ferkha)

½ teaspoon bicarbonate of soda

1 teaspoon instant yeast

3-4 cups water

2 tablespoons corn oil

Filling

400 g minced meat

4 medium onions, cut into small cubes

2 tablespoons oil

½ cup pine nuts

2 medium tomatoes, cut into small cubes

1 tablespoon sumac

½ teaspoon hot pepper

½ teaspoon cinnamon

¼ bunch parsley, cut small

salt and pepper

How to Cook:

Dough:

Mix the flour, yeast, water and bicarbonate using your hand until it becomes fluffy and smooth. The dough must be soft like yogurt, add water if necessary. Cover and put in a warm place for 2 hours.

Place a non-stick pan on the stove, and brush with oil. Fill one small cup of coffee with the dough and spread it in the pan. Cook only one side. Repeat same procedure until all of the remaining dough is finished.

Filling:

In a pot on the stove, fry the onions with oil until they change color. Then, add the meat and stir until water evaporates.

Then, add tomatoes and mix. Leave it on low heat for 10 minutes. Next, add salt, pepper, hot pepper, and sumac. Lastly, add cinnamon and parsley.

Decorate each one with 4 pine nuts.

Bake in the oven until they golden brown.
