moudardra with burghul

Moudardara is a lentil dish that is so popular throughout Lebanon and the Middle East. It’s a great source of protein and fibre, and also a tasty vegetarian dish that is traditionally eaten with yoghurt or tomato salad.

Ingredients

1 cup red lentils

½ cup thick cracked wheat (burghul)

2 onions, diced

2 tablespoons corn oil

4 cups water

salt to taste

How to Cook:

In a pan, fry the onions with the corn oil until they turn to dark color. Then, add one cup of water and let simmer for 10 minutes.

Place the lentils and the remaining water on medium heat and leave on for 20 minutes. Then, add the onions, cracked wheat and salt. Keep on low heat for 30 to 35 minutes.

Serve with Salad or yoghurt…
