okra stew with rice

The Okra is known for its many nutritional and health benefits, thus the Okra stew is a regular dish in Lebanese households often cooked in different styles. Sousou presents the famous Okra Stew with meat and rice adding her special touch of flavors.

Ingredients

200 g lamb cubes (beef cubes)

2 medium onions, cubed

8  garlic cloves, sliced

3 tomatoes, cubed

1 Bunch coriander, sliced

2 lemons, juiced

½ kg frozen okra

1 cinnamon stick

salt amp pepper to taste

Rice

1 cup uncle bens rice

¼ cup vermicelli

1¾ cups water

1 tablespoon corn oil

salt to taste

How to Cook:

Fry the onions in a high-pressure cooker. Then, add the meat and fry until the color changes.

In a separate pan, fry the coriander and garlic. Then, add them to the meat. Next, add the tomatoes and mix them with the meat. Let mixture cook on medium heat for 10 minutes. Next, add the frozen Okra and cover with water. Lastly, add salt, pepper, a cinnamon stick, lemon and the tomato paste.

Close the high-pressure cooker and let it cook for 30 minutes.

Soak the rice in water for half an hour before cooking.

Fry a quarter cup of angels’ hair. Then, add the rice along with 1¾ cups of water. Once it starts boiling, reduce the heat and cook the rice until all the water has evaporated.

Serve rice and okra in a plate.
