Pasta Shells Filled with Spinach

Try this pasta and spinach dish, perfect for sharing.

Ingredients

Filling:

 

  • 35  Big pasta shells
  • 2  Medium onions, cut into small cubes
  • 300  Grams frozen spinach, cut small
  • 2  Tablespoons corn oil
  • 100  Grams mascarpone cheese
  • 100  Grams feta cheese
  • 100  Grams mushrooms, sliced
  • 1  Tablespoon fresh Basil, cut small
  • Salt to taste

 

Red Sauce:

 

  • 1  Can red tomatoes, diced
  • 2  Onions, diced
  • 1  Garlic clove, smashed
  • 1  Small bottle spicy ketchup
  • 1  Tablespoon dry oregano
  • ½  Cup water
  • Salt and pepper to taste

 

Fresh Cream:

 

  • 30 ml fresh cream
  • 2 Eggs
  • Salt and pepper to taste
  • 100 Grams gruyere cheese

How to Cook:

Preparation:

 

  • Boil the water in a pan with one teaspoon of oil and ¼ teaspoon of salt. Then, add the pasta and continue boiling for 5 to 6 minutes. Remove the pasta and strain it.

 

Filling:

 

  •  Fry the onions with one tablespoon of corn oil. Then, add the spinach and stir for 10 minutes. Next, add the mushrooms and cook until the water evaporates. Finally, add the basil, pepper, salt and cheeses. Mix well and put aside.
  • In a pan on the stove, fry the onions and garlic with oil until they change color. Then, add the tomatoes, water, salt and pepper.
  • Let simmer on low heat for ten minutes. Remove from the heat. Then, add the bottle of spicy ketchup and the dried oregano. Grind them and set aside.

 

 

Fresh Cream:

 

  • Mix the fresh cream with the eggs, salt and pepper.

 

 

Pasta Shells:

 

  • Place the tomato sauce in a Pyrex. Fill each pasta shell with spinach and cheese. Place it on the sauce. Cover with the fresh cream and spread the gruyere cheese.
  • Bake it in the oven until the cheese melts.
