peanuts noodle salad

Packed with fresh vegetables and tossed with a rich sauce, the peanuts noodle salad burst with flavors. Easy to make ahead and feeds a crowd. Prepare it step by step with Sousou!

Ingredients

SALAD

200 g egg noodles

3 carrots, cut into fine strips

1 cucumber, sliced short and thin

100 g celery stick, cut into cubes

1 can corn, drained

1 small green chili, seeded and sliced

1 can bean sprouts, drained

1 cup peanuts, grilled

¼ cup sesame seeds, grilled

DRESSING

1 tablespoon dark soy sauce

1 tablespoon light soy sauce

2 tablespoons balsamic vinegar

½ Cup olive oil

1 tablespoon sesame oil

1 tablespoon lemon juice

salt and pepper

How to Cook:

In a pot on the stove, boil water with one teaspoon salt. Once water is boiling, turn the heat off and add the noodles. Close the pot and leave for 6 minutes.

Next, drain the noodles and set aside.

Mix the noodles with all of the prepared vegetables.

Combine the dressing ingredients in a cup. Then, toss it into the noodles and vegetables mixture.

Lastly, sprinkle the sesame seeds and peanuts over the salad.
