Ingredients

  • 1 medium pumpkin
  • 4 tablespoons honey
  • ½ cup cubed dried apricots
  • ½ cup raisin
  • ½ cup cubed dried plum
  • ½ cup cashews
  • ½ cup pine nuts
  • ½ cup pistachios
  • ½ cup peeled almonds
  • 2 onions, diced
  • 3 tablespoons corn oil
  • 2 cups rice
  • ½ teaspoon grated fresh ginger
  • 1 teaspoon cinnamon
  • salt and pepper
  • 2 cups water
  • 1 tablespoon hot pepper paste (optional)

How to Cook:
  • Cut the head of the pumpkin, take off all the seed and roots.
  • Coat the inside of pumpkin with 2 tablespoons of honey.  Keep aside.
  • In a bowl soak the rice for ½ an hour.
  • In a pan on the stove fry the onion until has color.
  • Then, add apricot, raisin and plum. Next, add cashews,
  • pine nuts, pistachios and almonds. Fry until has color.
  • Strain the rice and add it to the mixture of onion and nuts.
  • Lastly add water, 2 tablespoons of honey, ginger, cinnamon, salt and pepper
  • Then, add hot pepper paste.
  • Cook, when start boiling, low the heat and cook until the water is evaporated.
  • Once cooked, fill the pumpkin with the prepared rice.
  • Cover the pumpkin with the head and put water in a tray and place the pumpkin on water and bake it in oven for one hour or until the pumpkin is done.
  • Once cooked take off from oven and remove the head.
  • Cover the pumpkin with a towel for 10 minutes.
  • Slice the pumpkin and serve hot.
