Healthy and light, Sousou’s quinoa and kale salad is a must-try and we’d love for you to taste it

Ingredients

  • SALAD
  • 1 cup black and white quinoa
  • 2 cups water
  • 150 grams kale, chopped small
  • 2 carrots, grated
  • ½  cup chopped parsley
  • ½ cup raspberries
  • ½ cup fried pine nuts

 

  • DRESSING
  • ½ cup olive oil
  • ½ cup balsamic vinegar
  • 1 tablespoon honey mustard
  • 1 teaspoon soy sauce
  • 1 tablespoon honey
  • salt and pepper

How to Cook:
  • Heat the quinoa in a pot with water, when it starts to boil reduce the heat & keep it cooking for 20 minutes. Then, drain it.
  • Place the quinoa in a bowl, add the kale, parsley and carrots.
  • In a cup mix all of the dressing ingredients together.
  • Pour the dressing over the salad mix well sprinkle the raspberries and the pine nuts on the top.
