Although they all share the same health benefits, the red variety preserves its fresh crisp texture.

Ingredients

  • 1 Cup quinoa
  • 2 Cups water
  • 1 Lollo rosso lettuce, chopped
  • 2 Heads baby lettuce, chopped
  • 2 Carrots, cut lengthways
  • 4 Cucumbers, cut lengthways
  • 8 Black tomatoes, cut into quarters
  • 4 Plums, sliced
  • ¼ Cup grilled sesame seeds
  • 12 Pitted black & green olives
  • 1 Avocado, cut into cubes (coated with Lemon)
  • 2 Beetroots, cut into cubes

 

Dressing;

 

  • 4 Teaspoons balsamic vinegar
  • 4 Tablespoons olives oil
  • ½ Teaspoon black pepper
  • Salt to taste

How to Cook:
  • Heat the quinoa in a pot with the water. When it starts boiling, reduce the heat & keep it cooking for 20 minutes. Then drain it.
  • Put the quinoa, lettuce, carrots, cucumbers and tomatoes in a big bowl. Then, add the plums, beetroots and olives.
  • In a cup, combine the dressing ingredients together.
  • Spread the dressing over the ingredients & mix well. Decorate the top with the avocado & sesame seeds.
