Ingredients

  • 1  Turkey (5 kilos)

 

  • THE RUB
  • 100 Grams butter, melted
  • 1 Tablespoon dried rosemary
  • 1 Tablespoon herbs de provence
  • 1 Tablespoon dried oregano
  • 1 Tablespoon lemon juice
  • Salt and pepper

 

  • THE FILLING
  • 1 Carrot, chopped
  • 2 Leeks, chopped
  • 3 Zucchinis, chopped
  • 1 Cinnamon stick
  • 1 Bay leaf
  • ½ Cup water or 1/2 cup orange juice

 

  • THE RICE
  • 200 Grams minced meat
  •   3 Onions, diced
  •   Salt and pepper
  •   4 Cups white American rice
  •   5 Cups water and turkey stock.

How to Cook:
  • Defrost the turkey.
  • Mix the butter and all of the rub ingredients together.
  • Sprinkle some of the spice rub into the cavity of the turkey. Separate the skin from turkey using your fingers. Sprinkle the remaining rub between the skin and the meat.
  • Fill the inside of the turkey with carrots, zucchinis and leeks. Then, add the cinnamon stick and bay leaf. Tie the legs of the turkey together.
  • Put the turkey on a sheet of aluminum foil. Pour the wine over the turkey and cover with aluminum foil.
  • Bake the turkey in the oven. (30 minutes per kilo). During the last 30 minutes, take off the aluminum foil and continue cooking the turkey uncovered until golden.

 

  • THE RICE
  • Soak the rice for half an hour
  • In a pan, fry the onions with oil until it changes color. Then, add the meat and stir until water evaporates. Next, add rice, salt and pepper. Lastly, add the water and turkey stock.  Once it starts boiling, reduce the heat and let it simmer until all the water evaporates.
