spicy fish filet with rice

Spicy Fish Fillet & Rice. A healthy, easy dish with flavours that pack a punch.

Ingredients

Fish

800 g fish filet

1 teaspoon red hot pepper

salt and white pepper to taste.

2 tablespoons butter

2 tablespoon vegetable oil

½ cup flour

Rice

1 teaspoon black pepper

2 tablespoon vegetable oil

1/4 cup almond, toasted

1/4 cup pine nut, toasted

3 tablespoons chopped fresh coriander

1 teaspoon cumin

1 teaspoon lemon rind ,sliced

1 tomato, diced

1 hot chili pepper, sliced

2 garlic cloves, smashed

3 medium onions, diced

5 cups water + 2 fish cubes

3 cups basmati rice (rinsed and drained)

salt to taste

How to Cook:

Mix flour, red pepper, salt and white pepper. Coat the fish with flour and fry it on both sides with 2 tablespoons of oil and butter. Keep aside

In another pot, sauté the garlic and onions in the same oil of the fish, adding 2 more tablespoons of oil until it translucent. Add the red hot pepper and lemon rind and stir for few minutes.

Then, add cumin, salt and pepper. Mix and sauté for another few minutes Next, add the tomatoes and mix further. Then, add the rice and fresh coriander. Stir to combine. Lastly, add 5 cups of water and the fish stock and mix.

Cover and leave to simmer on low heat.

For Serving

Place the rice in a serving plate, place the fish all around and garnish with almonds and pine nuts
