Here is a delicious and easy recipe to prepare Lahm Bi Ajin, to taste even better that the ones you order from outside. They have a unique mix of flavors and are perfect for a late breakfast or a quick lunch. Serve them with yogurt for a yummy taste.

Ingredients

MEAT

400 g minced meat

3 medium onions, diced

2 tablespoons oil

1 tablespoon sumac

salt and pepper to taste

½ cup pine nuts

DOUGH

4 cups flour

1 teaspoon instant yeast

½ teaspoon sugar

½ teaspoon salt

½ cup corn oil

1 to 1¼ cup water

How to Cook:

MEAT:

In a pan, fry the onions with oil until they change color. Add the meat and stir until water evaporates. Then, add salt, black pepper, and sumac.

DOUGH:

Mix the flour, salt and sugar in a bowl. Make a hole in the center, and pour in the instant yeast. Then, add the oil. Add gradually water and kneed it to form a dough.

Put the dough on a floured work surface. Knead it until it becomes smooth.

Divide the dough into 4 balls. Cover with a nylon film and cloth. Leave to rest for 1 hour.

MEAT PIES:

Roll out the dough on a floured table until it becomes thin. Cut it with a rounded cookie cutter, in order to create circles.

Seal the edges from four sides, making sure to press firmly and keep the middle open.

Fill the middle with one tablespoon of the meat mixture. Then, add some pine nuts.

Put them into an oiled tray. Bake them in the oven until they change color.
